YOUR GUIDE TO MASTERING SMOKE POINTS

LOWER SMOKE POINT OPTIONS:

Use these oils when temperatures are low, like a light saut'e, or as a finishing oil or salad dressing.

  • Extra virgin olive oil has a slightly peppery taste with a smoke point of 325̊-350̊

  • Virgin or cold-pressed coconut oil is unrefined, has a strong coconut-y taste with a smoke point of 350̊

  • Sesame oil has a rich nutty taste with a smoke point of 350̊

HIGHER SMOKE POINT OPTIONS

Use these more refined oils, which taste more neutral, for safely cooking at high temperatures.

  • Refined coconut oil has a less coconut-y taste and a smoke point of 400̊

  • Sunflower oil’s uber-mild taste has a smoke point of 450̊

  • Avocado oil has a mellow taste with a smoke point of 520̊

AVOID OR USE THESE ONLY SPARINGLY

These oils have a high smoke point, but are heavy with inflammatory omega-6s.

  • Grapeseed oil has a clean taste and a smoke point of 420̊

  • Peanut oil has an unsweetened peanut butter-like taste and a smoke point of 450̊
